Shrimp Scampi
This Shrimp Scampi is a light yet flavorful dish that comes together in under 30 minutes. Shrimp are paired with angel hair pasta and is tossed in a zesty lemon-butter sauce, infused with garlic and white wine. Perfect for weeknights or special occasions, this pasta will leave everyone asking for seconds.

Ingredients
- 1 pound of shrimp, peeled and deveined
- ½ pound of angel hair pasta
- 2 cloves of minced garlic
- ½ sweet onion diced
- ¼ cup of shallot finely chopped
- ½ cup of parmesan
- ½ cup of white wine
- ¼ cup of lemon juice
- 2 tbsp of pasta water
- 2 tbsp of olive oil
- 3 tbsp of butter
Spices
- ¼ cup of finely chopped parsley
- 1 tsp of red pepper flakes
- ½ tsp of salt (to taste)
- ½ tsp of pepper (to taste)
Optional Ingredients
- Capers: Add a salty, tangy kick to balance the richness of the butter sauce. Toss in before deglazing the pan with white wine
- Baby Spinach: Before adding the pasta to the sauce, toss spinach to add a fresh note.
Instructions
Begin by filling a pot with water and bringing it to a boil. Once boiling, add 1 tablespoon of salt, and angel hair pasta. Cook pasta according to the package instructions.
Ensure the shrimp are peeled, deveined, and pat dry. Season with salt and pepper on both sides.
In a medium saucepan, heat olive oil over medium heat. Place shrimp in the pan and cook for 2-3 minutes on each side until the shrimp turns pink. Remove the shrimp from the pan and set aside.
In the same pan, add the diced sweet onion and sauté until the edges turn golden brown, about 3-4 minutes. Add the shallots, garlic, and red pepper flakes, stirring until the garlic is fragrant (about 30 seconds).
Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let the wine simmer and reduce by half, about 2-3 minutes. Stir in the lemon juice and 3 tablespoons of butter, allowing the butter to melt and the sauce to come together.
Add the cooked angel hair pasta to the pan with the sauce, followed by the cooked shrimp. Toss everything together to coat evenly. Stir in freshly grated parmesan cheese until it's melted into the sauce. Add the chopped parsley and adjust seasoning with pepper to taste.
Plate the pasta and garnish with extra parsley and parmesan if desired. Serve immediately and enjoy!
