Maple-Glazed Roasted Sweet Potatoes with Sausage and Broccoli

Ingredients
- 2 sweet potatoes peeled and diced into bite-sized pieces
- 2 italian sausages
- 1 pound of broccoli
- Fresh parsley, chopped (for garnish)
Vegetable Marinade
- 2 tbsp of olive oil
- 2 tbsp of pure maple syrup
- 1 tsp of garlic powder
- ½ tsp of red pepper flakes
- ½ tsp of salt
- ½ tsp of pepper
Instructions
Preheat the oven to 375°F (190°C) and line a baking sheet with aluminum foil or lightly grease it. In a small bowl, whisk together the olive oil, maple syrup, garlic powder, red pepper flakes, salt, and pepper until well combined. Clean and peel your sweet potatoes and dice into bite sized pieces. Place the diced sweet potatoes in a large mixing bowl and pour half of the marinade over them. Toss gently until the sweet potatoes are evenly coated. On a baking sheet spread out the sweet potatoes and place into the oven for 15 minutes.
While the sweet potatoes bake, combine the broccoli florets with the remaining marinade and cut the sausage into slices (about ½ an inch in size). After 15 minutes, remove the baking sheet from the oven. Add the sliced sausage and broccoli to the baking sheet, distributing them evenly. Return the baking sheet to the oven and bake for an additional 15 minutes, or until the sweet potatoes are tender, the sausage is cooked through, and the broccoli is lightly charred at the edges.
Once finished, remove from the oven and sprinkle chopped parsley over the top for a fresh finish. Serve hot and enjoy your maple-glazed roasted sweet potatoes with sausage and broccoli!
