Ramp Pesto
Experience the perfect blend of garlicky goodness in this ramp pesto. All you need is ramps, olive oil, lemon juice, parmesan cheese, toasted pine nuts, and salt. This pesto is perfect for tossing with pasta, spreading on sandwiches, or drizzling over grilled vegetables.

Makes: 8 OZ of Ramp Butter
Ingredients
- 1 cup of ramps
- ½ cup of olive oil
- ¼ cup of parmesan
- ¼ cup of pine nuts
- 2 tbsp of lemon juice
- 1 tbsp of salt
Instructions
In a pan over low to medium heat, toast the pine nuts for about 3-4 minutes, stirring continuously until lightly golden. Be mindful not to burn them. Once toasted, set aside.
In a food processor, combine ramps and olive oil, blending until smooth and well incorporated.
Add grated parmesan cheese, toasted pine nuts, fresh lemon juice, and salt to the ramp mixture in the food processor. Pulse until all ingredients are fully combined and the pesto reaches your desired consistency, scraping down the sides of the processor bowl as needed. Adjust seasoning to taste if necessary.
Serve immediately with your favorite pasta or store in an airtight container in the refrigerator for up to a week. Enjoy!
