Hot Honey Grilled Chicken Caesar Wraps

Makes: 2 wraps
Ingredients
- 2 chicken breasts
- 2 tortillas
- 2 cups of arugula
- 2 cups of romaine lettuce
- ¼ cup of parmesan
- ¼ cup of red onion
- ¼ cup of caesar salad dressing (I recommend Drew's)
- 2 tbsp of lemon juice
- 1 tsp of scallions
- 1 tsp of olive oil
Spices
- ¼ cup of hot honey
- 2 tbsp of salt
- 2 tbsp of pepper
Instructions
On a cutting board, halve the chicken breasts and season with a drizzle of olive oil, salt, and pepper. Heat a medium frying pan over medium-high heat and cook the chicken breasts for 3-4 minutes on each side until cooked through. Remove from the pan, chop into small pieces, and toss with hot honey.
Dice red onion and shave fresh Parmesan cheese.
In a large mixing bowl, combine arugula, romaine lettuce, hot honey chicken, red onion, scallions, and Parmesan. Drizzle with lemon juice and season with freshly cracked salt and pepper. Finish with Caesar salad dressing and toss until well combined.
Lay your tortillas on a flat, clean surface. Spoon the salad mixture onto the center of the tortilla. Start by folding one side towards the center, then fold the other side over the first, overlapping slightly if needed. Take the bottom edge of the tortilla (closest to you) and fold it up over the filling. Begin rolling the tortilla away from you and roll until the tortilla is completely wrapped around the filling, forming a neat cylinder shape.
Cut the wrap in half at a diagonal and serve immediately.
