Crab Stuffed Mushrooms

Preheat your oven to 350°F (175°C) and allow the cream cheese to come to room temperature to ensure it's easy to mix and spread.

Begin by cleaning the mushrooms thoroughly and removing the cores to prepare them for stuffing. You can use a spoon or a small knife to gently remove the cores without damaging the mushroom caps.

In a mixing bowl combine cream cheese with crab meat, old bay, chopped parsley, finely diced chives, and ¼ cup of parmesan. Set the remaining parmesan to the side as we will use it to top the mushrooms later. Mix until all the ingredients are well combined and the mixture is smooth.

Once combined grab a spoon full of the mixture and stuff into the mushroom, filling them to the top. Arrange the stuffed mushrooms on a baking sheet or in a baking dish, making sure they're evenly spaced and not touching each other. Bake the stuffed mushrooms in the oven for approximately 20 minutes, or until the mushrooms are tender and the filling is heated through. After baking, remove the mushrooms from the oven and sprinkle remaining parmesan cheese over the tops of the stuffed mushrooms. Turn on the broiler and place the mushrooms back in the oven for about 5 minutes, or until the cheese is melted and golden brown. Once the mushrooms are done broiling, carefully remove them from the oven.

Drizzle a small amount of fresh lemon juice over the stuffed mushrooms for a burst of brightness, and sprinkle lemon zest on top for a citrus flavor.

Serve the stuffed mushrooms hot as a delicious appetizer or side dish and enjoy!
