Ingredients
Dry Ingredients
- 1 ½ cups of flour
- ⅓ cup of granulated sugar
- ⅓ cup of light brown sugar
- 1 tsp of baking soda
- 1 tbsp of cinnamon
Wet Ingredients
- 3 ripe bananas
- 1 egg
- ⅓ cup of vegetable oil
- 2 tbsp of vanilla extract
Crumble Topping
- 1 cup of flour
- ¾ cup of brown sugar
- 1 tsp of cinnamon
- 6 tbsp of melted butter
Instructions
Preheat the oven to 375°F (190°C). Line the muffin tin with liners or thoroughly grease your pan with butter or baking spray. Mash the bananas until few chunks remain. Mix in the egg, oil, and vanilla extract.
In separate bowl combine flour, cinnamon, sugar, and baking soda. Gradually add to the banana mixture, stirring until well combined. Scoop the batter into the muffin tin leaving a little bit of room at the top. Set to the side.
Prepare the topping by combining the brown sugar, flour, and cinnamon. Melt the butter and mix into the topping mixture with a fork. Sprinkle in topping on top of the muffins.
Bake for 15 minutes. Ensure that the inside is fully cooked by inserting a toothpick into the center. The toothpick should come out clean. Allow the muffins rest for 10 minutes and enjoy!
